NotTurtle: The First Endangered Animal Dish Without The Endangered Animal, A Recipe Made By AI For Good (and it's actually good).

Every year 100,000 endangered Green Sea Turtles are either poached, harvest or hunted for its meat. Why? Well, the history is complicated. But many local cultures and coastal communities eat the meat as part of a traditional dish: Turtle Soup.

But NotCo has the means of helping. Its AI chef Giuseppe has the ability to replicate any meat's taste, texture and molecular structure, using just plants. Typically used for burgers and chicken. But this time, Giuseppe was put to the ultimate challenge of recreating turtle meat. All to help keep a species and a culture alive.
